If you often find yourself at the nearest bakery or sandwich shop for lunch, you could be doing a lot of damage to your diet plan without even realising it. Even if you try and choose healthy food at these locations, chances are that you’re still taking in too many calories, sugars, or not getting in enough quality protein that your body needs to build and repair damaged muscle tissues.
Fortunately, you can learn to pack your own delicious lunch in just a few minutes that will serve your body well and give you exactly what you need to get your day started off right.
This sweetcorn salad recipe is going to do just that. It’ll provide you with a great source of protein from the shrimp, some complex carbohydrates and dietary fiber from the vegetables it contains, and offer a bit of healthy fat from the olive oil based salad dressing.
As the carbohydrates are primarily coming from vegetable sources in this dish, they’ll be very slow to release in the body, meaning your hunger will stay under control at all times. Plus, that also means this dish will work well for anyone following a lower carb diet plan.
So whip this up in a hurry first thing in the morning and you can side-step that trip to the bakery.
2 cups chopped hearts of romaine
5 grape or cherry tomatoes
1/4 cup sliced cucumber
1 sliced celery stock
½ cup kernel corn
20 cooked peeled shrimp
1 tablespoons Italian salad dressing, prepared with olive oil
Toss the lettuce, tomatoes, celery and cucumber into a salad, drizzling dressing on top.
Next, add the shrimp on top and then toss once again.
